Whole Roasted Goodness Chicken

serves 4-6

Here's a delicious, healthy, and a sure winner with your kids way to prepare chicken and seasonal vegetables. Your kids can help you organize and prep out the ingredients, allowing them to take responsibilty in cooking great food for your family  too!

1 whole roaster chicken
1/4 white onion, peeled
4 garlic cloves, peeled
3 fresh thyme sprigs
2 small sweet peppers
1/2 fresh lime

stuff the bird with the above ingredients

1/2 tsp salt
1/4 tsp pepper
1 tsp thyme
3 T olive oil
1 T honey
1/2 lime juice

Combine above ingredients, and rub mixture in between meat and skin through out all over the chicken. Roast in 375 oven until golden on top, then drop heat to 350 and roast until internal tempurature is 160 degrees. Be careful not to burn outside of chicken. Slow and low…

6 red potatoes
1 sweet potato
1 cheyote
6 crimini mushrooms

Clean, quarter/chop vegetables as desired, roast with olive oil, salt and pepper. You can roast veggies in same baking dish/sheet/container as chicken. Note: veggies won't get crispy if they are not exposed to air, so the shallower the roasting pan/dish, the better…
