
Sweet Potato Crunch
Ingredients:
1 large sweet potato, about 2 cups, cooked, skin removed
1 cup water
5 cups rolled oats
1/4 cup dried cranberries
Directions:
Preheat oven to 375 degrees.
Combine cooked sweet potato, water, rolled oats and raisins; mix well.
Press mixture onto lightly greased sheet pan and spread out until about 1/2 inch thick.
Bake in oven until mixture is golden brown and hard, about 30 minutes, rotating pan as needed.
Remove from oven, cool and break into large bite-sized chunks.
These can be kept in the refrigerator for up to two weeks.
Blueberry Banana Bites
Ingredients:
1 1/2 cups blueberries
1 banana, peeled
1 cup water
5 cups rolled oats
Directions:
Preheat oven to 375 degrees.
Mash banana and combine with water and rolled oats. Fold in blueberries, trying to leave them intact.
Press mixture onto lightly greased sheet pan and spread out until about 1/2 inch thick.
Bake in oven until mixture is golden brown and hard, about 30 minutes, rotating pan as needed.
Remove from oven, cool and break into large bite-sized chunks.
These can be kept in the refrigerator for up to two weeks.
