Serves 4

1 tablespoon garlic, minced
1⁄2 cup white onion, diced
1⁄4 cup milk or yogurt
1 cup rice cake, crushed
1 pound ground turkey
1 tablespoon dried Italian herbs
1 egg
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon olive oil

Preheat oven to 375 degrees.
Heat medium skillet on medium heat.
Add oil and sauté garlic and onions until fragrant and translucent, around 3-5 minutes; set aside to cool.
Add turkey, crushed rice cake, milk, herbs, egg, salt, pepper and the garlic and onion mixture to the bowl.
Mix just until ingredients are evenly distributed.
Roll two-ounce meatballs (a cookie scoop works well for this) and place on a foil- or parchment-lined baking sheet.
Bake until meatballs are firm to the touch and reach an internal temperature of 165 degrees, about 10-15 minutes.
