Delicious, hydrating vegetables and fruits make this a tasty full-flavored salad. Substitute your favorite cheese or other nuts and seeds for a slightly different flavor.

Serves 4


1 1/2 cup strawberries, sliced, 1/2 cup reserved
1 tablespoon apple cider vinegar
3 tablespoons finely chopped fresh basil leaves
2 tablespoons olive oil
1 teaspoon honey
Salt and black pepper to taste

4 big handfuls spinach, washed and dried
1/2 cup pumpkin seeds
1/2 cup crumbled goat cheese, optional
1 large avocado, bite-sized chunks


Add 1 cup strawberries, vinegar, basil, olive oil, honey, salt and pepper to food processor or blender and puree until smooth.
Toss spinach, pumpkin seeds, cheese, avocado and remaining strawberries in a large bowl and lightly drizzle with dressing.
Serve and enjoy!
