Spiralized Pad Thai

Ingredients

  • 2 medium zucchini spiralized
  • 2 cups green cabbage shredded
  • 2 cups 1 large red pepper thinly sliced
  • 3-4 green onion both green and white parts, thinly sliced
  • ½ cup cilantro or parsley chopped
  • 1 pound chicken or other meat of choice cooked and diced (optional)
  • ¼ cup peanut butter creamy or crunchy, no sugar added
  • ¼ cup lime juice
  • 1 tablespoon + 1 teaspoon tamari or regular soy sauce (low sodium)
  • 2 teaspoons sriracha sauce
  • ¼ cup unsalted peanuts chopped, for garnish (optional)

Instructions

  • To prepare the spiralized zucchini noodles ahead of time, wrap them in a clean towel or paper towel and wring out the excess moisture before using.
  • Place first six ingredients in a bowl and toss to combine.
  • Place peanut butter, lime juice, tamari and sriracha in a bowl and mix well.
  • Toss zucchini mixture with sauce.
  • Top with chopped peanuts to serve.
