4 cups fresh spinach, washed and dried
2 cups sweet potatoes or yams, roasted, chilled and cut into bite-sized chunks
3/4 cup fresh carrots, peeled and sliced
3/4 cup Cucumber Yogurt Dressing, or to taste
2 cups fresh raspberries (or berries of your choice), washed and dried
In large salad bowl, gently combine all ingredients except berries.
Toss with the salad dressing and garnish with the fresh berries.
