4 regular servings, or 8 small servings


1/2 cup buttermilk
1/4 cup plain Greek yogurt
2 tablespoons apple cider vinegar
1 tablespoon honey
2 tablespoons shallots, minced
2 heads broccoli, medium-sized
1/4 cup red onion, diced
3/4 cup raw, unsalted almonds, toasted
1/3 cup raisins


For the dressing, combine buttermilk, yogurt, vinegar, honey and shallots; place in refrigerator for 30-60 minutes.
Shave broccoli on a mandolin, with a food processor, or thinly slice by hand.
Combine broccoli, red onion, almonds and raisins in a bowl.
Evenly coat salad with dressing.
Chill for 1 hour or more, stirring occasionally.
