4 tablespoons olive oil, divided
1/2 cup white or yellow onion, chopped
1/2 cup diced tomatoes, canned, with juice, or fresh
1 teaspoon fresh garlic, minced
1 1/2 pounds green beans, fresh or frozen, trimmed
1/4 cup water, if using fresh tomatoes
1/2 teaspoon kosher salt
1/4 teaspoon pepper
Preheat skillet with 3 tablespoons olive oil on medium heat.
Add onions and cook until tender, about 3 minutes, stirring frequently.
Add garlic, tomatoes, green beans and water (if using fresh tomatoes) and mix well.
Cover and simmer until green beans are hot and tender.
To serve, stir in salt and pepper and drizzle with remaining olive oil.
