Salmon & Goat Cheese Scrambler

Servings: 4

Ingredients

  • 8 large eggs
  • 2 tablespoons olive oil
  • 1 cup tomatoes diced
  • 5 ounces fresh spinach
  • 1/2 pound cooked salmon skinned and flaked
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup fresh goat cheese at room temperature

Instructions

  • Whisk eggs and set aside.
  • Melt olive oil in a large nonstick skillet on medium high heat. Add tomatoes and spinach.
  • Sprinkle with salt and pepper and cook, stirring occasionally, until spinach is wilted, 2-3 minutes.
  • Add eggs and cook until half-cooked, stirring occasionally.
  • Add salmon and goat cheese. Stir occasionally until eggs are firm, about 1-2 minutes.

Notes

Fresh goat cheese is creamy and mild. As it ages, the flavor sharpens and it becomes firmer in texture. For egg dishes like this one, the mild cheese is preferred.
