Beautiful contrasting colors with the edamame, cauliflower and a dash of turmeric. Wonderful roasted as instructed, or as a hot stir-fry would be delicious as well.
2 2/3 cups Cauliflower, flourets
1 1/3 cups Edamame
3/4 cups Onions, diced
2 Tbsp Garlic, minced
1/2 Tbsp Italian herb blend (basil, thyme, oregano, etc)
2 pinches or more if desired, Turmeric, ground
1 Tbsp + 1 Tbsp reserved Olive oil
3/4 Tbsp Lemon juice, fresh
3 Pinches Salt
Pre-heat oven 350 degrees.
Toss ingredients together.
Roast layer on sheet pan until cauliflower, edamame, onions are lightly golden and tender, 20- 25 minutes.
Remove from oven, then toss with remainder oil. Serve.
