1 1/2 tablespoons olive oil
2 delicata squash, about 1 ¼ pounds each, washed and dried
1/2 teaspoon ground turmeric
1 teaspoon minced garlic
1/4 teaspoon kosher salt
¼ teaspoon black pepper
¼ teaspoon paprika
chopped fresh parsley, for garnish
Preheat oven to 400°F.
Cut squash lengthwise in half, and remove seeds.
Slice halved squash into thin half circles.
Place sliced squash in large bowl, then toss with olive oil, turmeric, garlic, salt, black pepper, and paprika.
Lay squash flat on the foil or parchment lined baking sheet, cook in oven until tender and lightly browned, about 10 to 12 minutes.
Garnish with parsley if desired.
