Roasted Beets
Serves 4

1 1/2 pounds beets, skinned, cut into bite-sized pieces
3 tablespoons olive oil
1/4 teaspoon kosher salt
1/8 teaspoon black pepper

Preheat oven to 350 degrees. Line a sheet pan with foil or parchment paper.
Place cut beets on sheet pan, and toss with olive oil, salt and pepper.
Cook until beets are tender, about 35-45 minutes, stirring occasionally
