2 cups fresh, beets
2 Tbsp. olive oil
1/8 tsp. salt
1 tsp. black pepper
Preheat oven to 375 degrees.
Cook beets whole, wrapped in foil, on a baking pan.
Cook for 45 minutes, or until tender.
Remove from oven, and cool. Once cool, peel (using gloves to protect hands from getting stained), and cut into bite sized pieces.
Toss with favorite vinaigrette, and garnish with sliced green onions.Serve warm or room temp if desired.
