Ingredients
  • 1 1/2 pounds ground beef
  • 3/4 cup bread crumbs or ground rice cakes
  • 3/4 teaspoon sweet paprika
  • 1 1/2 teaspoons ground cumin
  • 3/4 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes
  • 3/4 teaspoon garlic powder
  • 1 1/2 teaspoons ground sumac
  • 1 1/2 teaspoons dried parsley
  • 1/2 teaspoons kosher salt
  • 2 tablespoons cooking oil

Instructions
  1. Place all ingredients in a bowl and mix well.
  2. Form mixture into balls, a bit smaller than golf ball size, and press into flat patties about the size of ones palm. These will be small, making about 16 patties 1 1/2 pounds of ground meat.
  3. Add oil to large frying pan and cook meat patties (kofte) on medium heat until they are dark brown and caramelized, flipping once, about 4-6 minutes per side. Grill if desired.
  4. Serve with rice and grilled or roasted vegetables, or eat in a sandwich.
