Ingredients
  • 2 cups red onion chopped
  • 2 tablespoons garlic minced
  • 2 tablespoons olive oil divided
  • 2 pounds tomatoes cored and halved
  • 1 1/2 teaspoons fresh thyme leaves finely chopped
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon balsamic vinegar
  • 1 1/2 pounds fresh green beans trimmed

Instructions
  1. Preheat oven to 350 degrees.
  2. Toss half of the olive oil with all ingredients except the green beans.
  3. Spread mixture on parchment-or foil-lined baking sheet.
  4. Bake at 350 degrees until onions are browned and tomatoes are very tender, about 40 minutes.
  5. Cool mixture and place in food processor or blender.
  6. Pulse 4-5 times, until mixture is in small chunks.
  7. Boil or steam green beans until just tender. Remove beans from water/steam.
  8. Using the same pan, toss beans with remainder of olive oil.
  9. Add tomato mixture, and cook for 2 minutes or until thoroughly heated.
