Rainbow Salad

Ingredients

  • 1 cup orange bell peppers sliced
  • 1/4 cup radishes sliced
  • 1 cup tomatoes chopped
  • 1 cup Granny Smith apples sliced or chopped
  • 1 cup mango chopped
  • 1 tablespoon cilantro chopped
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt or to taste
  • 1/8 teaspoon pepper or to taste

Instructions

  • Combine peppers, radishes, tomatoes, apples, mango and cilantro in a bowl.
  • Toss with olive oil, salt and pepper.
