This is a very simple yet every delicious lentil soup. 15 minutes to prep, 30 minutes to cook, easy, enjoy!
2 T olive oil
1/2 large yellow onion, small chop
2 C red lentils
6 C organic vegetable or chicken broth or stock
3/4 C diced tomatoes, drained
3 Tablespoons fresh lemon juice or to taste, have some additional juice reserved for topping with eating
Water as needed to thin out
Combine for garnish:
3 T vinegar
2 fresh garlic cloves, minced
crushed red pepper flakes
Sauté onion until tender, add lentils. Stir then add broth and tomatoes and simmer for 20-30 minutes until lentils are tender. Season with lemon juice, and thin with water as necessary. Should be slightly thick. Optional – puree soup.
When eating, garnish by drizzling garlic vinegar and crushed red pepper flakes if desired.
