serves 2-4

2 whole trout, dressed
1/2 plum, ripe, sliced thin
1/2 lemon, sliced thin
1/4 red onion, sliced thin
2 large sprig fresh thyme
4 large sprig fresh parsley
4 cloves garlic, minced
2 T butter
salt and pepper to taste
Divide ingredients equally. Rub butter inside cavity of fish, and season with salt and pepper.
Stuff inside trout with plum, lemon, onion, garlic, parsley, thyme.
Grill directly on grill, or put on foil and grill until firm to the touch, about 5-7 minutes each side. If directly grilling, make sure grill is hot and oiled, so skin will sear, creating a crust, not sticking to the grill as a result.
