Serves 4

1/4 cup apple cider
1 (1-pound) pork tenderloin, trimmed 
2 tablespoons brown sugar
2 tablespoons spicy brown mustard
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoon garlic, minced
2/3 cup chopped pecans

Combine apple cider and pork in a zip-lock plastic bag; seal and marinate in refrigerator for 2 to 3 hours.
Preheat oven to 400 degrees.
Remove pork from bag; discard cider. Combine sugar and next 5 ingredients and rub on pork; roll pork in pecans. 
Place pork on broiler pan coated with cooking spray. Bake for 25 minutes or until a thermometer registers 160 degrees. 
Remove from oven and let stand for 10 minutes before slicing and serving.
