Thank you all for making the Orono Foundation Great Gathering Event a delicious success! Here's the recipes we created today.

Cool Quinoa salad

Serves 4-6
1 cups quinoa
2 cups water
1 cup Grape or cherry tomatoes, cut in half
¼ cup Fresh mint, chopped 
¼ Cup fresh parsley, chopped 
2 Tbsp or more Fresh lime
¼ C grated or shredded parmesan cheese 
¼ C Olive oil 
Salt/pepper to taste

Bring water to boil, add quinoa, reduce to a simmer until water is absorbed and quinoa is soft, 12 to15 minutes. Set aside and chill.
Mix remainder ingredients with cooked cooled quinoa and adjust seasonings as desired, enjoy!

Totally Tasty Turkey Meatballs
Serves 4-6
1# Ground turkey 
1 egg
1 T Ground Cumin
1 T fresh lemon juice 
¼ C yellow onion, chopped 
¼ C fresh parsley, chopped
Salt/pepper to taste

Mix all ingredients together until well incorporated and form 6 meatballs. Bake, broil, grill or fry until golden, and cooked in the middle, about 7-8 minutes. Enjoy!

Fruity Fruit kabobs 

Serves 6
Make sure to thoroughly wash all fruit before preparing. If you have extra cut up fruit, simply put it in a container to eat as a snack later on!

1 1/2 Cups, fresh pineapple, cut into bite sized chunks
1 1/2 Cups Strawberries, remove greens, and cut in half
1 1/2 Cups Cantaloupe , cut into bite sized chunks
10 inch long Skewers x 6

Assemble fruit, skewering it in desired pattern, 2 pieces of each fruit if possible.

Super Veggie Kebobs
Serves 6-8
1 1/2 cup red onion, quartered
3/4# button mushrooms
1# zucchini, large chunks
1# egg plant, peeled, large chunks
1 1/2 cup red bell pepper, large chunks

1/4 cup lemon juice
1/8 cup garlic, mince or grated
1/8 cup olve oil
1/4 tsp salt
pepper to taste

Assemble vegetables, skewering in pattern if desired. Marinate with lemon mixture.
Grill kebobs on Medium/medium low heat until browned approximately 16-20 minutes, (8-10 minutes per side). 
Periodically bast kebobs with lemon marinade.
Remove from heat once vegetables are tender and browned.


Fruit Medley Parfaits

serves 6
3 C fruit, sliced or chopped 
3 C vanilla yogurt
3 C granola
Clear glass or plastic cup
Spoon to serve

Put 1/2 C fruit in bottom of glass as a layer.
Then layer  1/2 C yogurt on top of fruit.
Then layer 1/2 C granola on top of yogurt.
Eat with a spoon, and enjoy!
