Bang'n Bruchetta by Claire, Rachel, Molly, Danielle, Coach Tiegan
2 Baguette, sliced
bell peppers, sliced
cucumbers, peeled, diced
Brush sliced baguette with olive oil and bake in oven until tender.
Combine tomatoes, peppers, cucumbers, basil and parsley. olive oil, balsamic vinegar.
Top mixture on baquette then add a little cheese. Serve.

gradually add chopped vegetables, milk, soy sauces,

Brown Rice Stir-fry
serves 1 Lacrosse team
4 cloves garlic
1 4 inch daikon radish
5 cups vegetable broth
5 cups water
1 can diced tomatoes
5 cups rice
1. Chop all vegetables, chop onions thin
2. Put broth, water, rice, diced tomatoes in stock pot, bring to a boil, then turn down to a simmer, cover and cook for 25 minutes or until rice is tender.
3. Saute onions, carrots, garlic, zucchini, radish, peppers,
4. Once rice is done, mix with vegetables, season with salt and pepper as needed.

Cut fruit into bite sized pieces.
Peel and cut apples and sprinkle with cinnamon and honey. Keep separate from other fruit.
Add honey to fruit and set aside until fruit looks glossy. Set aside.
Whip cream with a little vanilla in a cold bowl with a whisk, when cream starts to become thick pay attention for soft peaks, then set aside and keep in fridge.
Arrange lady finger cakes in pan.
Make layers of lady fingers with whipped cream, then fruit, repeat process.
Sprinkle lightly with cocoa powder and mint leaves on top for garnish.
