Ingredients

  • ½ cup red onion thinly sliced
  • ½ cup Kalamata olives rinsed
  • ½ cup feta cheese crumbled
  • 2 cups grape or cherry tomatoes chopped
  • 3 cups cucumber peeled if desired, and diced
  • ¼ cup olive oil
  • 3 tablespoons balsamic vinegar
  • teaspoon black pepper

Instructions

  • In a bowl, toss together all ingredients.
  • For richer flavor, prepare salad and refrigerate overnight.
