Serves 6

 4C  fresh jicama,

¼ C red pepper finely diced

¼ C green onion, thinly sliced

½ C mango, diced

1 orange – the zest and the juice

1 lime – the zest and the juice

1 T honey

1/2 T balsamic vinegar

1 T olive oil

Peel jicama and grate.  Combine with red pepper, and green onion, mix well.

In separate bowl, add lime juice and zest, orange juice and zest, honey, balsamic vinegar, oil. Mix well, then toss with jicima mixture.
