French Toast with Maple-Yogurt Sauce

Ingredients
- 2 cups plain Greek yogurt divided
- 3 tablespoons pure maple syrup divided
- 1 teaspoon vanilla extract divided
- 4 eggs beaten
- 1/3 cup 1% milk
- 1 teaspoon ground cinnamon
- 1 teaspoon lemon zest
- 8 slices thick whole-wheat bread
- 2 tablespoons unsalted butter
Instructions
- Preheat oven to 225 degrees.
- For maple-yogurt dipping sauce, combine 1 cup yogurt, 2 tablespoons maple syrup and 1/2 teaspoon vanilla; set aside.
- In a large bowl, combine 1 cup yogurt, 1 tablespoon maple syrup, 1/2 teaspoon vanilla, eggs, milk, cinnamon and lemon zest; whisk until frothy.

- In a large skillet, heat 1/2 tablespoon butter over medium heat.Soak 2 pieces of bread in the batter and place in pan; cook until golden brown.
- Flip bread over and cook until browned and cooked through.
- Transfer to a baking sheet and place in the oven to keep warm while cooking the remaining French toast.
- Repeat cooking process with remaining bread, adding butter as needed.
- Once French toast is ready, cut into strips and serve with the dipping sauce.
