Quick Braised Greens
2 tablespoons unsalted butter
2 cloves garlic, chopped
16 ounces fresh spinach
1/4 cup low-sodium chicken broth
3 tablespoons Parmesan cheese, grated
1 tablespoon fresh lemon juice
1 teaspoon dried basil
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
Preheat sauté pan to medium-high heat.
Add butter and garlic; cook until translucent, about 3-5 minutes. Add dried basil and stir.
Reduce pan to medium heat; add spinach and cook until wilted, about 2 minutes.
Deglaze pan with broth; lower heat and simmer until liquid is reduced by half.
Add cheese, lemon juice, salt and pepper; mix thoroughly.
Portion on plates and drizzle with remaining liquid.
