Spicy Chicken Lettuce Wrap
Makes about 20 appetizer portions
1 T sesame oil
1 T light soy sauce
1 T chili puree with garlic
2 tsp. water
1 tsp. cornstarch
1# boneless chicken, chopped small
2 T hoisin sauce
2 T minced green onion
2 T garlic, minced
1 T fresh ginger, minced
8 oz. crimini mushrooms, chopped
1 to 2 heads or 20 Butter lettuce leaves, washed, dried and separated.
Cucumber, peeled and chopped
In large bowl, combine sesame oil, soy sauce, chili puree, water, cornstarch, and combine with chicken.
In large skillet, heat medium high heat.
Once pan is hot, add chicken, stir-fry 3 minutes then add hoisin sauce, cook and stir for 30 seconds.
Add garlic, ginger, and mushrooms stir-fry 3 minutes.
Stir in green onions, remove from heat.
Platter lettuce leaves, then portion mixture in lettuce leaves and garnish with peanuts, cucumber, and cilantro.
Turkey Wrap Medallions
Makes about 16 pieces
4 whole-grain tortillas
1/2 cup hummus
1/2 cup guacamole
3/4 cup red bell pepper, diced
8 ounces cooked turkey, deli-style is fine
1 cup fresh spinach, chopped
1/4 cup store-bought salsa (low-sodium, no added sugar)
Lay out tortillas on a flat surface.
Spread hummus and guacamole evenly on tortillas.
Add peppers, spreading evenly.
Add turkey, spinach and salsa.
Roll up, into bite-sized medallions
Zesty Ham Sliders
Makes 12 sliders
12 whole wheat (whole grain) slider buns
3/4 cup mayonnaise
3 tablespoons pepperoncini peppers, finely diced
3 tablespoons mustard
2 large, ripe tomatoes
1 1/2 pound low-sodium deli ham, thinly sliced
12 slices provolone cheese
12 red leaf lettuce leaves
Preheat oven to 400 degrees. Line a sheet pan with foil or parchment paper.
Toast slider buns, if desired.
Combine mayo, chopped peppers and mustard.
Cut tomatoes in 12 slices.
Place bottom halves of buns on sheet pan. Spread with seasoned mayo, followed by layers of ham, cheese and pickles.
Heat sandwiches in oven until cheese begins to melt, about 2 minutes.
Remove from oven, add lettuce and tomato slices and tops of buns.
