Cucumber-Hummus Cheese Stackers
- 1 English cucumber
- 1 cup hummus store bought or homemade
- 2 1-ounce slices cheddar cheese
- Wash cucumber and cut at an angle into 16 slices that are ¼ inch thick. You will have leftover cucumber.
- Place sliced cucumber on a large plate.
- Top each cucumber slice with one tablespoon of hummus.
- Cut each cheese slice into quarters and then into 8 triangles.
- Top each cucumber slice with triangle of cheese.
