Cucumber-Hummus Cheese Stackers


  • 1 English cucumber
  • 1 cup hummus store bought or homemade
  • 2 1-ounce slices cheddar cheese


  • Wash cucumber and cut at an angle into 16 slices that are ¼ inch thick. You will have leftover cucumber.
  • Place sliced cucumber on a large plate.
  • Top each cucumber slice with one tablespoon of hummus.
  • Cut each cheese slice into quarters and then into 8 triangles.
  • Top each cucumber slice with triangle of cheese.
