Serves 4

½ cup hummus, premade or homemade
1 large ripe avocado, pitted, sliced
1 large tomato, sliced thin
8 large eggs
4 slices whole grain bread


Fill a small pot or sauce pan with cool water, then add eggs.

Bring eggs to a full boil, then reduce to a simmer.

Simmer eggs for 3 minutes.

Remove  pan from heat, and remove eggs from hot water, and cool briefly with cold water, about 2 minutes.

Assemble by portioning humus on toast, followed by sliced tomato, then  sliced avocado, then top with eggs.

Using a fork, gently press down on eggs until they split exposing the yolk. Gently smash eggs on top.
