Serves 4



1⁄4 cup unsweetened cocoa powder

3 tablespoons light brown sugar

1tablespoon chili powder

1/2 teaspoon kosher salt

1 tablespoon granulated garlic

1 tablespoon dried oregano

2 teaspoons ground ginger

2 teaspoons ground cinnamon

1 teaspoons ground allspice

1 1/2 pounds boneless pork loin



Mix cocoa, brown sugar and spices together in a bowl. Rub pork loin with spice mixture and wrap in plastic wrap; refrigerate overnight.

Preheat oven to 400 degrees.

Place rubbed pork loin on a wire rack on a foil-lined baking sheet and roast for 15 minutes.

Reduce heat to 350 degrees and cover pork with foil. Cook another 15 minutes until firm to the touch, with an internal temperature of at least 145 degrees

Remove from oven and let rest at least 5 minutes before slicing.
