Learn an easy way to cook fish, with no mess. Broil it.
This wet rub will be good for 4 pieces of fish.
 
2 Tablespoon chopped basil
1 green onion, sliced
1/2 teaspoon dried basil, smashed
2 t dijon or whole grain mustard
1 T olive oil
1 fresh garlic clove, minced
1 liberal squeeze of fresh lemon (optional)
 
Mix and rub on fish, and then on a sheet pan with foil broil on high about 3-5 minutes until firm to the touch. Remove from broiler rack, plate, and enjoy!
 
If it's a thicker piece of fish, broil a few minutes until browned, then finish on middle rack until firm. Generally fish will cook at about 10 minutes per inch.
