Asian Marinated Cucumbers

Ingredients

  • 1 tablespoon apple cider vinegar
  • 1 teaspoon soy sauce low sodium
  • 1 teaspoon brown sugar or honey
  • 1 or 2 pinches dried ground ginger
  • 1 teaspoon fresh cilantro chopped
  • 2 tablespoons + 1 teaspoon olive oil
  • 3 cups cucumbers about 1 ½ medium

Instructions

  • Mince cilantro, then measure.
    In bowl whisk apple cider vinegar, soy sauce, sugar or honey, ginger and cilantro.
    Then whisk oil into mixture until oil is well incorporated with other ingredients.
    Taste and adjust seasoning if needed. It will be mildly sweet and tart.
    Wash cucumbers.
    Slice thinly and then place in marinade.
    Let marinate overnight if possible.
