These are not the typical Mexican taco delight. These have a good spoonful of  Indian inspiration and are the most flavorful, vibrant, zesty tacos I've tasted  to date. Serve these "build your own" tasty tacos. Wow, enjoy!

Amazing Seafood Tacos – serves 4
1lb. seafood – shrimp, scallops, calamari combo is great – thawed if not fresh
1/4 Cup white onion, thinly sliced
1/2 C green onions, chopped, portion in half
7 cloves fresh garlic, minced, portion in half
1 lemon, zested
1 lime, zested
1/4 fresh lemon wedge, juiced
1/4 fresh lime wedge, juiced
1/4 teaspoon ground cumin
1/4 teaspoon curry powder
1/4 teaspoon ground chili powder
1/4 teaspoon kosher or sea salt
1/8 teaspoon ground black pepper
2 Tablespoon olive oil
1/2 tsp cornstarch
1 tsp water
Serve with:
6 corn tortillas
1 jalapeno, sliced
1/4 Cup fresh cilantro, rough chop
1/4 Cup green onions, rough chop
1 avocado, chunked
1/4 C feta cheese
3-6 small lime wedges
In medium mixing bowl combine white onions, green onions (1 portion of 2), garlic (1 portion of 2), lemon and lime zest, lemon and lime juice, cumin, curry powder, chili powder, salt, black pepper, and olive oil. Add seafood (thawed if not fresh) and marinate for 1 hour.
Heat skillet/frying pan on medium high, once hot, carefully add mixture and cover if needed to avoid splattering. Add 2nd portion of green onions, and garlic to pan with seafood and stir. Once seafood is cooked through, about 2-4 minutes, remove seafood, leaving sauce in pan and reduce on medium heat by 1/2. Then, combine cornstarch and water and add to  sauce, stirring, once thick, turn off heat.
Place seafood on cutting board, chop into small pieces, then add back to sauce. Mix well, then bowl up to serve.
When serving, spoon cooked seafood mixture on corn tortilla, then add some jalapeno, cilantro, green onions, avocado, feta cheese, and squeeze fresh lime. Eat, and enjoy!
