Recipe: Zesty Creamy Potato Poppers

Zesty Potato Poppers

If you want an appetizer that's very easy to make with a lot of flavor, then this is for you. Make your own guacamole and salsa, or use pre-made if you're in a pinch. The potatoes can be cooked a few days in advance as well.

Serves: 4
Preparation Time: 30 min or less

Ingredients:
4 small potatoes
4 T guacamole
4 T salsa
4 T grated mozzarella cheese
olive oil, salt, pepper

Directions:
Preheat oven at 400 F degrees.
Cut potatoes in half, season with olive oil, salt and pepper, and roast until tender about 15-20 minutes. TIP: Potatoes can be roasted in advanced, refrigerated and then reheated.
Portion two halves per serving and assemble with guacamole, then salsa then mozzarella. Put back in oven, until cheese is melted.
