2 (about 2 1/2 cups) large, very ripe tomatoes, diced
1/4 cup fresh basil, thinly sliced
1/4 cup extra virgin olive oil
1/8 teaspoon black pepper
1 teaspoon fresh garlic, minced—optional
1/2 cup Parmesan cheese, grated
8 ounces dry whole grain rotini pasta
Cook pasta according to package directions. This can be done in advance, if desired.
To reheat pasta, add water to sauce pan or pot and heat on low for 1 minute. Then turn up heat to high, and cover. Once water is boiling, add pasta and cook about 1 minute or until pasta is hot and tender. Drain thoroughly.
Toss tomatoes, basil, olive oil and black pepper with hot pasta.
Top with grated Parmesan cheese.
