Tarragon Chive Egg Salad

Ingredients

½ cup yogurt

2 tablespoons fresh tarragon, minced

2 tablespoons fresh chives, minced

1 tablespoon lemon juice

1/8 teaspoon kosher salt

1/8 teaspoon black pepper

8 hard boil eggs, peeled, sliced

1 1/2 cups arugula, packed tightly

8 slices whole-grain bread (optional)

 

Directions

Combine yogurt, herbs, lemon juice, salt and pepper into a bowl.

Layer with arugula, two hard boiled eggs, topped with yogurt mixture.

Optional – Serve with toasted whole grain bread.
