Spinach Orange Walnut Salad with Turmeric Vinaigrette

Serves 4

 

Dressing Ingredients:

1/2 teaspoon ground turmeric

1/4 cup fresh squeezed orange juice (use the remaining 1/2 orange from directions below if desired)

1 teaspoon balsamic vinegar

1 teaspoon honey, optional

Salt and pepper to taste

1/4 cup extra-virgin olive oil

 

Salad Ingredients:

4 cups/large handfuls baby spinach

1 1/2 large orange, peeled, cut into bite-sized chunks

1 cup (about 1 medium) red bell pepper, seeded and chopped small

1/2 cup walnuts

 

Directions:

Make vinaigrette by combining turmeric, orange juice, vinegar, honey, salt and black pepper.

Mix well, add olive oil and whisk (or place all ingredients in an air-tight jar and shake vigorously) until thoroughly combined.

In a large salad bowl, add spinach, then toss with half of the vinaigrette.

Add peppers,  orange segments, and walnuts.

Lightly drizzle remaining vinaigrette on top of  salad.
