Ingredients
  • 2 cups plain Greek yogurt divided
  • 3 tablespoons pure maple syrup divided
  • 1 teaspoon vanilla extract divided
  • 4 eggs beaten
  • 1/3 cup 1% milk
  • 1 teaspoon ground cinnamon
  • 1 teaspoon lemon zest
  • 8 slices thick whole-wheat bread
  • 2 tablespoons unsalted butter

Instructions
  1. Preheat oven to 225 degrees.
  2. For maple-yogurt dipping sauce, combine 1 cup yogurt, 2 tablespoons maple syrup and 1/2 teaspoon vanilla; set aside.
  3. In a large bowl, combine 1 cup yogurt, 1 tablespoon maple syrup, 1/2 teaspoon vanilla, eggs, milk, cinnamon and lemon zest; whisk until frothy.
  4. In a large skillet, heat 1/2 tablespoon butter over medium heat. Soak 2 pieces of bread in the batter and place in pan; cook until golden brown.
  5. Flip bread over and cook until browned and cooked through.
  6. Transfer to a baking sheet and place in the oven to keep warm while cooking the remaining French toast.
  7. Repeat cooking process with remaining bread, adding butter as needed.
  8. Once French toast is ready, cut into strips and serve with the dipping sauce.
