Ingredients
  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cloves garlic chopped
  • 1 cup onions diced
  • 1 red bell pepper diced
  • 1 28-ounce can no salt added diced tomatoes
  • 1 cup low-sodium chicken broth divided
  • 1/2 teaspoon dried oregano
  • 2 tablespoons fresh basil minced

Instructions
  1. Season chicken with salt and pepper.
  2. Preheat pan to medium-high heat; add olive oil and chicken.
  3. Brown chicken on both sides; remove and set aside.
  4. Add garlic, onion and peppers to pan; cook until softened and lightly browned.
  5. Deglaze pan with ½ cup of chicken broth.
  6. Add tomatoes, remaining broth and dried oregano; bring to a light simmer.
  7. Add chicken; cover and simmer until chicken is tender, about 35-45 minutes.
  8. Uncover and reduce sauce until slightly thickened.
  9. Garnish with fresh basil.
