Father’s Day Grill Recipe: Grilled Turkey Sandwich

Looking for something delicious and a little out of the ordinary to grill up for Father's Day? Dads and families alike will enjoy my Grilled Turkey Sandwhich (hey – I'm a dad, so I should know, right?). Serve this with my Kalamata Quinoa salad and enjoy!
Grilled Turkey Sandwich
Serves 4
Ingredients:
4 large rustic whole wheat rolls
1 Tbsp butter, for buttering outside rolls
4 T roasted red pepper aioli*
½ lb. thin sliced deli Turkey
2 large tomato, sliced
4 slices provolone cheese
½ cup fresh spinach, rough chop
Directions:
Preheat grill to medium heat.
Cut ¾ way through rolls, creating a hinge.
Brush outside rolls with butter.
Assemble each sandwich by spreading 1 T aioli, then add turkey, tomato, cheese, and spinach.
Place sandwiches on grill and lay heavy pan on top to press sandwich down. Cook 3-6 minutes a side, or until bread is golden brown.
Flip over and repeat process until bread is golden brown and cheese is melted on both sides.
*to make aioli – 1 cup mayo, ¼ cup roasted red peppers minced fine, ½ tsp minced garlic or more if desired to taste, ½ tsp lemon juice or more if desired to taste, 1/8 tsp fresh thyme minced, 1/8 tsp fresh parsley minced, salt and pepper to taste. Mix by hand, or place all ingredients in food processor and blend. Adjust seasoning as desired.
